Legend has it that a local baker, inspired by the sight of St. Martin riding a white horse, created the crescent-shaped pastry to resemble the horse's horseshoe. He filled it with white poppy seeds, almonds, and other ingredients to symbolize the saint's generosity. Since then, the croissant has become a symbol of Poznań and is traditionally eaten on St. Martin's Day (November 11th). At the Croissant Museum, you'll witness a live demonstration of how the St. Martin's Croissant is made, following the traditional recipe and techniques.
